American · 20 min · Easy

Thick bread soaked in cinnamon-vanilla custard and pan-fried until crisp outside and soft inside.

The best French toast is crisp and golden on the outside and soft and custardy in the middle. Two things make the difference: thick slices of slightly stale bread, and a pan that's hot enough but not scorching.

Serve it with maple syrup and fresh berries for an easy weekend breakfast.

Ingredients

  • 4 large eggs
  • 1 cup (240 ml) milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt
  • 8 thick slices of day-old brioche, challah or sturdy white bread
  • 2 tablespoons butter, for the pan
  • Maple syrup and fresh berries, to serve

Instructions

  1. Whisk the eggs, milk, sugar, vanilla, cinnamon and salt in a wide, shallow dish until smooth.
  2. Heat a large skillet or griddle over medium heat and melt a little of the butter.
  3. Dip each slice of bread in the custard for 15 to 20 seconds per side, letting the excess drip off. Thicker bread can soak a little longer.
  4. Cook the slices for 2 to 3 minutes per side, until deep golden and set in the middle. Add more butter between batches.
  5. Serve hot with maple syrup and berries.

Tips

  • Keep finished slices warm on a rack in a 200°F (95°C) oven while you cook the rest.

Storing leftovers

Best fresh. Leftovers freeze well; reheat straight from frozen in a toaster.
